Job Purpose

Our Group, a leading and continuously evolving presence in the luxury hospitality sector, is seeking a Group Food & Beverage Controller. The role’s primary focus is the optimization of F&B cost control across all hotel properties within the Group. The role ensures the implementation of standardized cost control policies and procedures, monitors and evaluates F&B financial performance, and provides accurate, timely, and insightful management information to support strategic decision-making by the Group Financial Controller. Working closely with operational and procurement teams, the position drives cost optimization, strengthens financial controls, and promotes best practices to enhance profitability and operational excellence.

Key Responsibilities

  • Lead the monitoring and analysis of F&B costs across all hotel operations, ensuring effective cost control and profitability.
  • Analyze Budget, Forecast, and Actual performance, providing actionable insights to support financial planning and decision-making.
  • Oversee inventory management and purchasing controls, including stock accuracy, invoice validation, and supplier price compliance.
  • Ensure adherence to commercial agreements by monitoring negotiated pricing, discounts, rebates, and identifying invoicing discrepancies.
  • Manage and optimize cost control processes within POS, PMS, and ERP systems, including oversight of voids, discounts, complimentary items, and staff meals.
  • Drive food cost optimization through recipe costing, menu engineering, yield analysis, portion control, and waste reduction initiatives. Prepare and present timely financial and operational reports, monitor key performance indicators (KPIs), and maintain management dashboards.
  • Develop and implement group-wide cost control standards, conduct internal audits, deliver training to hotel teams, and promote best practices across all properties.

Qualifications

  • Bachelor's degree in Finance, Accounting, Business Administration, Hospitality Management, or a related field.
  • Minimum 5 years of progressive experience in F&B Cost Control, Cost Control, or Financial Analysis within a hotel group or hospitality organization.
  • Strong knowledge of F&B cost control principles, inventory management, budgeting, forecasting, and financial reporting.
  • Proficiency in Microsoft Excel (advanced level) and experience working with ERP, PMS, and POS systems.
  • Excellent analytical, organizational, and problem-solving skills, with strong attention to detail.
  • Ability to interpret financial data and translate it into actionable business recommendations.
  • Excellent communication and interpersonal skills, with the ability to collaborate effectively across operational and corporate teams.
  • Fluency in English, both written and spoken. Knowledge of an additional language will be considered an asset.
